Hearty Country Chicken and Ham Recipe
3 to 3 1/2lbs. Chicken, in pieces
Salt and pepper
2 Tbsp. butter or margarine
1 Tbsp. olive oil
1 green pepper, sliced
1 onion, chopped
1 package sliced mushrooms
1 1/2 cups cooked cubed ham
1 can diced tomatoes
1/2 tsp parsley flakes
1/4 cup dry white wine & 1/4 cup water
2 Tbsp cornstarch
1/4 cup water
Sprinkle chicken pieces with salt and pepper. Melt butter in a deep skillet on medium heat.
Saute chicken on all sides until golden brown.
Remove chicken from skillet. Set aside.
To the same skillet, add olive oil, then the green pepper and onion. Saute for about 5 minutes on medium heat until onion and pepper are slightly browned.
Add mushrooms and ham to vegetables. Stir to blend. Saute 5 minutes more.
Stir in tomatoes, breaking them up with fork. Add parsley wine and water.
Return chicken to the skillet, moving vegetables on top.
Cover top with a lid or tightly seal with aluminum foil.
Reduce heat. Simmer for 40 minutes.
Remove chicken pieces to a serving platter.
Mix cornstarch and water together, add to sauce.
Serve sauce poured over chicken or serve separately.
Serving suggestion, spanish rice.
